Green Plantain Chips

Ingredients:

Vegetable oil
1 large, green plantain (about 1 pound)
Salt, optional

Preparation:

Fill a deep fryer or Dutch oven with vegetable oil, about 2 to 3 inches.

Heat oil at 375 degrees F.

Remove skin from plantain and cut off the fibrous strings.

Slice the plantain into paper thin rounds.

Deep fry plantain slices, a dozen at a time until golden brown on both sides, about 3 to 4 minutes.

Drain on paper towel.

Sprinkle with salt and serve chips warm or at room temperature.

Yields 4 servings.
