Pork Cubed 1 lb
New Mexico Green Chile (Baca's is available at Albertsons)they have hot
and mild and they can be mixed. They come in 8 oz containers
Onion diced large
Tomato diced medium
Water or chicken stock
Flour 1 TBSP
Salt and Garlic powder
Brown Pork meat....add Tbsp of flour for thickening.
Add onions
Add tomatoes 2 large
Add chile
Add in 2 cups water and 1 can of chicken stock
Salt and garlic to taste.
Let simmer for 1 hour.
This is a basic recipe, you can add more onions or if too hot, you can add more tomatoes.
Chicken can be substituted for pork ( My mom always used pork, so that's why I do it)
You can add potatoes too.
As an alternative, most stores also have Anaheim chiles in the fresh
produce. These can be roasted in your oven, then peeled and chopped.
Unless the chiles are from New Mexico, they won't be as hot, but are very
flavorful, you can reduce the amount of tomatoes.
