Also Known As: A Vegetable Stew from La Mancha

Ethnic Origin: Spain

Ingredients:

Aubergines (eggplant)
tomatoes
squash
peppers
onions
olive oil or lard

Note: The quantities are chosen according to taste.

Preparation:

Heat the oil and saute the not-too-finely chopped onions and peppers in squares.

When they are almost done, add the squash and aubergine, cut into squares.

When everything is done, add the tomatoes, peeled and chopped.

It is left to cook until it is fried after which salt is added.
